I love making healthy dessert balls. Don’t ask me why, but creating them in any situation is my default. If I have a sweet tooth, am feeling creative, needing to de-stress, or am tired (which, by the way, is not probably the wisest idea )
I always, always have a stash tucked away in my freezer. They are great for healthfully satisfying a sweet tooth or serving guests in a last minute pinch. I currently have 3 batches in my freezer – Davida’s No Bake Mint Chocolate Protein Balls, Gena Hamshaw’s Coconutty for Chocolate Chip Cookies from her cookbook, and my most recent creation (I clearly like having choices ).
I whipped up these lovely little treats after feeling creative and energized from a lovely walk in the crisp fall air. A few simple ingredients gives you a fabulous treat or power snack in just minutes.
Peanut Butter Cacao Energy Balls
Makes: 6-8 one inch energy balls
Ingredients
- 1 cup dates (I used deglet nour & soaked them in water for approximately 10 minutes to soften, or use Medjool dates instead)
- 1/2 cup rolled oats
- 3 tablespoons cacao powder
- 2 heaping tablespoons smooth peanut butter
- few pinches sea salt
- 2 T. warm water
Instructions
- Place dates (drained if you soaked them in water), rolled oats and cacao powder in a food processor and process until crumbly.
- Add peanut butter and a few pinches of sea salt and process until combined.
- Add 2 tablespoons of warm water as the food processor is running and process until a large ball of dough forms.
- Roll into balls. You may want to wet your hands through the process to avoid the dough sticking to your hands. I use a mini ice cream scoop to make the balls equal sizes.
- Store in the fridge for 1 week or freezer for up to 4 weeks.
Now grab an ice cold glass of your favorite plant milk and enjoy!
