I’ve been busy creating recipes to finish this year’s Project Cookbook in a Year so I almost panicked when I realized it was the end of the month again and time for the Best of November! However, to my surprise, we have enjoyed several dishes from the blogging world to share with you!
This month I’m all about recipes that are quick and easy while being hearty, nourishing, and loaded with nutrients – because its the holiday season and who has time to slave away in the kitchen?!
Main Dishes
Chickpea Pancakes from Angela Liddon are one of my favorite hearty, fun, and simple recipes after a busy day. Could there be a more fun way to get some beans in your diet?! I don’t think so! Their endless health benefits should make them a top priority for foods to grab for each day.
Dana describes her Sweet Potato Chickpea Buddha Bowl as “a big bowl of plant-based goodness” and I certainly agree! Roasted sweet potatoes, red onion, broccolini, and kale topped with crispy chickpeas and a maple tahini sauce that you’ll want to pour over everything – its the perfect way to get loads of nourishment packed with flavor.
Mexican dishes are a regular in our home and I love finding ways to mix it up. DIY Burrito Bowls are another fabulous recipe from Angela Liddon. Nik enjoyed his over rice and I loaded (seriously) my ingredients over a large bed of greens. Quick, easy, and satisfying!

Desserts
Girls night always calls for chocolate. At my recent girls night I decided to whip up Angela Liddons’ Maple Cinnamon ABU Dip and give it a chocolatey twist by adding 2 tablespoons of cacao powder (I would recommend 3-4 tablespoons if using cocoa powder). Served with banana chunks and apple slices, it made for the perfect sweet treat! This dip stores well in the fridge for several days making an easy snack and is delicious drizzled over a big bowl of oats in the morning.
