As the end of Summer nears and the beautiful Fall weather is just ahead, its time to squeeze in a few last picnics during these warm weather days. Prompted by one of my clients requesting ideas to refresh her picnic basket with nutrient-rich foods rather than loading up on bread and burgers, I’ve complied a list of my favorites for your next outing!
Check out these simple tips to plant-power your next picnic!
- If you are planning on sandwiches I often select a hearty whole grain bread topped with a generous amount of hummus, thin cucumber slices, lettuce, tomato, and sprouts. Sophia’s Low-Fat Creamy Mashed Chickpea and Veggie Sandwich would also travel well.
- Hummus with veggies and pita chips. You could simply purchase a container (my favorite is Roots No-Oil Hummus), or if you want to whip up your own, Ella Leché’s Lemon Herbed Lentil Hummus is a fun twist on the usual.
- Dr. Fuhrman’s Black Bean Mango Salad is always a hit at parties. Great eaten as a side, in a wrap, or with tortilla chips.
- Heather Crosby has an entire series of On-the-Go Jar Salads that would be perfect for your next outing or any time you’re in need of a portable lunch.
- Big bowls of fruit are always refreshing on hot days, or have a little fun with Angela Liddon’s Rainbow Fruit Kebobs with Creamy Cherry Pie Fruit Dip. You’re sure to be the hit of the party if you show up with these.
Maybe you’re not in charge of packing the entire picnic or you’re showing up to a neighborhood cookout. In these situations I focus on loading my plate with as many veggies, fruit, and beans that are available in order to crowd out the other stuff. Fill up on that first and you won’t be as hungry for other foods that aren’t as nutrient-rich later.
