It’s been another great month of wonderful eats! August brought a lot of great new breakfast recipes since I went through a big slump in how I start my morning and was craving a change from my usual. Better than fabulous new ways to start my day, August was also filled with sweet family and friends staying with us most weekends, meaning I don’t have many pictures to share. It would kind of creep you out if your hostess was photographing you as you ate, wouldn’t it?
Breakfast
I’m pretty sure I survive off of overnight oats and in my search for something new the Superpower Matcha Vanilla Overnight Oats from Nichole Axworthy of A Dash of Compassion was a simple twist on my typical breakfast with the antioxidant punch and energy boost from matcha.
Almond Butter Chocolate Overnight Oats from Melissa of My Whole Food Life were absolutely fabulous. Add some fresh berries for a hearty and sweetly satisfying start to your day!
You know you have a sweet friend when they visit and gift you with a jar of Toasted Muesli from Cookies + Kate. Thanks Erica! You warmed my heart and made this muesli a staple in our home!
I begin each week by making an oatmeal bake for a quick, hearty, and fun breakfast on busy mornings. Gena of Choosing Raw brings another great bake with her Vanilla Berry Baked Oatmeal. I substituted applesauce for maple syrup since I tend not to prefer much sweetness during breakfast, and it was just right for me!
Angela Liddon’s Heavenly Carrot Cake Baked Oatmeal is indeed…heavenly. Again, I adjusted the maple syrup a bit by using 1/4 cup applesauce and 2 tablespoons of maple syrup.
Main Dishes
Eggplant, Chickpea, and Tomato Curry with Chickpea Rice Flatbread from Choosing Raw was simple, hearty, satisfying and even better the next day! This will definitely on repeat through the Fall and Winter months.
Desserts
No Bake Mint Chocolate Protein Bars from Davida of The Healthy Maven are (um, were) stocked in my fridge and the perfect post-dinner treat!
